Kulfi is the Indian ice cream without eggs. It is made of milk and flavoured with almonds, saffron and pistachios. It has a slightly harder texture than regular ice cream and contains an intensely sweet and nutty flavour. They can mould into all shapes, and muffin baking pans are a superb substitute.
